Stuffed Turkey Peppers
1/2 cup wild rice, cooked
2 cups onion, chopped
1 tsp Italian seasoning
salt and pepper, to taste
1 cup mozzarella cheese
2 cloves garlic, chopped
1 lb extra lean ground turkey
2/3 cup tomato juice
10 cherry tomatoes, halved
4 bell peppers

Wash peppers. Cut off tops and remove seeds. Place in boiling water for 5 minutes. Remove and set aside.

Saute onion in pan. Add garlic. Add turkey, tomato juice. and seasoning. Cook until turkey is no longer pink. Add rice and stir.

Stuff peppers with turkey mixture. Top with mozzarella.

Bake 15 min at 400.
