Macaroni and Cheese
1 1/2 cups macaroni, cook
1 Tbls. butter
1 Tbls. flour
1/2 cup milk
1/2 cup vegetable puree (squash or cauliflower)
1 1/2 cups cheddar cheese
4 oz. cream cheese
1/2 tsp. salt
1/8 tsp. paprika
1/8 tsp. pepper
* melt butter in sauce pan; add flour; add milk and cook 5min.
* add vegetable puree and cream cheese; add cheddar; add seasonings
* add cooked macaroni
* Pour in greased 9x13
* Bake 375, 10-20 min.
My alterations: (didn't have every ingredient and tasted divine!)
* I used 3/4 to 1 cup half n half instead of milk
* I used 1/4 cup cauliflower puree AND 1/4 cup pumpkin puree (didn't have squash)
* I used 3/4 cup mozzarella and 3/4 cup colby jack (didn't have just cheddar)
* I used 1/2 cup sour cream instead of cream cheese (didn't have any)
* I forgot to use the seasonings!
* I sprinkled Italian Bread Crumbs on top for extra texture and flavor
Mine still tasted heavenly!
I only baked 1/2 and saved the other half to either freeze or bake tomorrow! =)
