CHOCOLATE CHIP CHEESECAKE BALL
1 - 8 oz package of cream cheese (you can also use neufchatel, which is 1/3 less fat)
1/2 cup butter
1/4 tsp vanilla
2 Tbsp brown sugar
3/4 cup powdered sugar
3/4 cup mini choc. chips
Beat softened cream cheese, butter & vanilla until creamy.
Slowly add sugars until blended.
Stir in chocolate chips.
Place mixture in plastic wrap and form into a ball.
Refrigerate at least 1 hour
Serve with graham cracker sticks or vanilla wafers (I used chocolate teddy grahams)
You can also (after it's been firmed up) roll the ball into things like oreo crumbs, graham crumbs or toffee bits to coat the ball and add some extra fun. Tonight I rolled it in toffee bits.
For larger crowds, I double the recipe. Tonight's serving was a single recipe.
