Pineapple Banana Bread

Pineapple Banana Bread
adapted from playing with sugar

1 1/2 cups all-purpose flour
1 cup sugar
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp ground cinnamon
1 egg
1 egg white
1/2 cup applesauce
1 tsp vanilla extract
4oz crushed pineapple, drained juice reserved
2 Tbsp pineapple juice
1 cups (2 to 3 medium) mashed ripe bananas

In a large bowl, combine the flour, sugar, salt, baking soda, and cinnamon. In another bowl, beat the eggs, applesauce and vanilla; add pineapple, pineapple juice and bananas. Stir into the dry ingredients just until moistened. Pour into a greased 8-in. x 4-in. loaf pan.

Bake at 350 for 60-65 minutes or until golden brown and a toothpick remains clean when inserted into the center. If the tops are start to get too brown, cover with a piece of foil and continue baking to prevent top from getting too dark. Cool for 10 minutes before removing from pans to wire racks.

Yield: 1 loaf.
