Paula Deen's Corn Salad

Paula Deen's Corn Salad

2 (15 oz) cans corn, drained (or frozen)
2 cups shredded cheddar cheese
1 cup mayonnaise
1 cup green pepper, chopped
1/2 cup red onion, chopped
1 (10 1/2 oz) bag Chili Fritos, crushed

* Mix first 5 ingredients and chill
* Stir in Fritos just before serving


BUT: The way I made it, which was better in my opinion, is this:

32 oz. frozen corn, thawed/drained if needed
2 cups shredded cheddar cheese
1/2 cup mayonnaise
1/2 cup sour cream
1 Tbls. Fiesta Dip Mix (Tastefully Simple)
1 bell pepper (any color), diced
*Optional: 1/2 red onion, diced*
1 bag Chili Fritos, crushed

*Mix mayo, sour cream and Fiesta Mix
* Add corn, peppers and onion; chill
* Just before serving, add cheese
* Put Fritos in bowl for garnish (but don't mix in salad-it gets soggy and mushy)
